Delicious and healthy soba noodle salad with a simple tasty sauce. You can find wakame (dried seaweed) and hijiki ((brown sea vegetable) in most stores. Enjoy!

Soba Noodle Salad Recipe
Cuisine: Japanese Local Style
Ingredients
  • Soba Salad:
  • 1 package (8 oz.) soba noodles
  • 1 sweet onion, thinly sliced
  • ½ cup wakame, soak in water, squeeze excess water
  • ½ cup hijiki, soak in water, squeeze excess water
  • 1 package bean sprouts
  • 1 small bunch watercress, rinsed and drained, cut into 1-inch pieces
  • Sauce:
  • ½ cup vegetable or canola oil
  • ⅔ cup soy sauce
  • 4 tablespoons sugar
  • 6 tablespoons fresh lemon juice, about two lemons
Instructions
  1. Boil soba noodles per instructions. Drain well.
  2. In a 9 x 13-inch pan, layer soba salad ingredients in order. Cooked noodles on bottom, sweet onions, wakame, hiijiki, bean sprouts, and cut watercress pieces.
  3. Combine sauce ingredients and blend well.
  4. Pour sauce over salad before serving.
Notes
We like to microwave sauce for about 10-15 seconds and then pour over salad. Toss together and serve. It also tastes good cold. Enjoy!
