Seafood Hot Potato Salad

Ingredients
  • 2 to 3 red or salad potatoes
  • 1 can baby shrimps, drained
  • 1 can crab meat, or can tuna, drained
  • ⅓ cup onions, minced
  • 1 cup celery, diced
  • 1 cup mayonnaise
  • 1 teaspoon salt or to taste
  • Garnish with green onions
Instructions
  1. Boil potatoes until fork tender. Cool and cut into bite size chunks. Sprinkle with a little salt while warm.
  2. In a mixing bowl, add cooled potatoes, shrimp, crab meat, onions, celery, mayonnaise and salt to taste. Mix well.
  3. Place in a small baking dish and bake at 450 degrees for about 8 to 10 minutes. Then broil 2 to 3 minutes until top is browned.
  4. Optional: garnish with green onions.
