Portuguese Bean Soup
Cuisine: Portuguese Local Style
  • 1 pound dry kidney beans
  • 1 large ham hock
  • 1 16 ounce Portuguese sausage, sliced or diced
  • 1 onion, sliced
  • 1 garlic clove, crushed
  • 2½ quarts of water
  • 1 can tomato sauce (8 ounce)
  • 1 medium to large potato, cubed
  • 1 large carrot, cubed or sliced
  • (Optional)1 small head of cabbage, chopped
  • (Optional) ¾ cup uncooked macaroni or broken up spaghetti noodles
  1. Wash and drain kidney beans.
  2. In a large pot, add beans, ham hocks, sausage, onion slices, garlic, water and tomato sauce.
  3. Bring to a boil, reduce heat and simmer for about five hours.
  4. Next, add potatoes and carrots and cook for 30 minutes.
  5. Then, add cabbage and noodles, bring to a boil, reduce heat and cook 15 minutes or until noodles are cooked.

A simple recipe with basic ingredients and still “ono.”
