Pork Adobo Local Style

  • 2 tablespoons canola oil
  • 4 pounds pork butt, cubed
  • 1 large onion, chopped
  • 5 garlic cloves, sliced
  • Salt and pepper
  • 2 Hawaiian chili peppers, chopped
  • ½ cup red wine vinegar
  • ¼ cup soy sauce
  • 2 tbsp. fish sauce
  • 3 bay leaves
  • 4 sprigs thyme
  • 1 tablespoon peppercorns
  • 2 large russet potatoes, peeled and cubed
  1. In a large pot, heat oil and add cubed pork. Brown pork for 5 to 10 minutes. Then add onion, garlic, salt and pepper, to taste. Cook until you can smell the fragrance of the onions and garlic. Next, add the rest of the ingredients except the potatoes. Cover and cook on medium low for about an hour.
  2. Add potatoes and cook about 30 more minutes or until potatoes are soft; stirring occasionally.
