Cuisine: Hawaiian Local Style Recipe
  • 1½ cups mixed poi
  • ¾ cup sugar
  • ¾ box mochiko flour
  • 1 to 1½ cups water
  • Oil for deep frying
  • Sugar and cinnamon, optional
  1. Mix together poi and sugar. Slowly add mochiko flour and water. Stir together until mixture is thick like pancake or muffin batter.
  2. Temperature needs to be 375 degrees or higher. Use a ⅓ measuring cup and add a heaping spoonful of batter. Then using a spoon to scoop and drop batter in hot oil. It comes out a bit rounder than just using only a spoon. Cook until golden brown.
  3. Let drain on paper towels.
  4. While still hot sprinkle with sugar and cinnamon mixture, optional.
You can use a 1 pound bag of poi mixed with 1 cup of water. Then measure 1½ cups of poi for recipe.

Also, temperature needs to be 375 degrees or higher. We used a deep fryer and the temperature reached only 350 degrees. When you first drop the batter in, it will sink to the bottom. If that happens, you need to scrap the bottom midway through the cooking process.
