Pickled Mango with Li Hing Mui
Cuisine: Hawaiian Local Style
  • 5 pounds green mango
  • ½ cup rice wine vinegar
  • ½ cup apple cider vinegar
  • 2 cups sugar
  • ¼ cup Hawaiian salt or kosher
  • 1 package li hing mui, optional
  • 1 red food coloring, optional
  1. Remove peel from mangoes and slice.
  2. Place mango slices into jars or a medium size bowl, add li hing mui.
  3. In a medium pot, add vinegar, sugar and salt and bring to a boil; stirring until sugar and salt are dissolved. Remove mixture from heat and add drops of red food coloring as desired; let stand. Mixture should be hot to touch, then pour over mangoes.
  4. Cover and let cool. Store in refrigerator
Li hing mui is Chinese for salty dried plum, this is optional.
Red food coloring added to pickled mangoes is for good luck, is also optional.
