Pickled Mango

Ingredients
  • 1 gallon green mangos, peel and cut it in half
  • 6 cups water
  • 4 cups brown sugar
  • 1 cup vinegar
  • ½ cup rock salt
  • 2 tablespoons red coloring
  • Add some li hing mui (optional)
Instructions
  1. Boil water, brown sugar, vinegar and salt mixture.
  2. When cooled, add mangos and coloring.
Notes
This recipe is a sweet/salty version. Add more vinegar to your taste. Enjoy!

  • 5 mangoes
  • 5 pint jars
  • 6 cups water
  • 4 cups brown sugar
  • 2 cups white vinegar
  • ¾ cups salt
  • 2 tablespoons food coloring (red)
Instructions
  1. Slice raw mangoes.
  2. Boil the remaining ingredients, and be sure sugar is dissolved.
  3. Cool completely before placing them in jars.
  4. Put mango slices in jars and pour the delicious syrup over.
  5. Set aside and let sit for about a week, if you can!
