Orange Jell-O Poke Cake

  • 1 box super moist yellow cake mix
  • 3 eggs
  • ¼ cup oil
  • 1 cup 7-up
  • ¼ cup water
  • 1 box orange Jell-O
  • ¾ cup hot water
  • ¾ cup cold water
  • Frosting
  • 1 box (3.4 oz) vanilla instant pudding
  • 1¾ cups milk
  • 1 container cool whip
  • Optional: shredded coconut
  1. Preheat oven 350 degrees. Lightly grease 9 x 13-inch baking pan.
  2. Mix together cake mix, eggs, oil, 7-up and water. Try not to over mix batter. Bake for 25-30 minutes. Cool. Using the top of chopstick, poke holes, about 1-inch apart.
  3. Dissolve orange Jell-O with hot water, then add cold water. Pour over cake. Cover with plastic wrap and refrigerate for 2 hours.
  4. Frosting: Whisk together milk with instant pudding and then add cool whip. Mix all together, be sure not to over mix cool whip. Top with shredded coconut.
