Misoyaki Butterfish

Ingredients
  • Marinade:
  • ⅓ cup sake
  • ⅓ cup mirin
  • ⅔ cup sugar
  • 1 cup white miso paste
  • Butterfish:
  • 4 butterfish (7 oz.) fillets
Instructions
  1. Marinade: In a small saucepan, add marinade ingredients except for the miso and bring to a boil for 5 minutes, then simmer for another 10 minutes.
  2. Remove pan from heat and then add miso paste. Mix well. Set aside and let cool. Pour sauce over fish and let marinade in refrigerator for 2 to 3 days.
  3. Bake: Preheat oven to 450 degrees. Line baking pan with foil and add butterfish. Bake for approximately 5 to 8 minutes. Before butterfish is cooked through, broil for 2 to 3 minutes until caramelized. Keep a careful watch, it will burn easily.
