Mango Macadamia Nut Bread (Two Loaves)
Cuisine: Hawaiian
  • Dry ingredients:
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • Wet ingredients:
  • 1 cup canola oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1⁄4 cup milk
  • 1 cup granulated sugar
  • 1⁄2 cup dark brown sugar
  • Filling ingredients:
  • 1⁄2 cup macadamia nuts, chopped
  • 2 cups ripe mangoes, peeled and diced
  • 2 teaspoons ginger, grated
  1. Preheat oven to 400°F.
  2. Dry ingredient instructions:
  3. Sift flour, baking soda, baking powder and cinnamon into a large bowl. Set aside.
  4. Wet ingredient instructions:
  5. In another large mixing bowl, whisk oil, eggs, vanilla, and lemon juice. Then add milk, granulated and brown sugar and whisk until sugars dissolve.
  6. Mix dry ingredients and form a well in the center. Add wet ingredients in the center. Fold together without mixing. Don't over work the batter or it will be tough. A few lumps are fine.
  7. Combine filling:
  8. Next, fold in nuts, mango and ginger.
  9. Grease loaf pans with cooking spray on bottom and sides well. Pour batter into pans and place on a baking tray.
  10. Baking instructions:
  11. Bake for 20 minutes at 400 degrees. Then lower temperature to 350 degrees for another 30 minutes, or until cooked. Test with a toothpick, if it comes out clean then it's done. You also want it to rise and have a crack down the center. If bread is becoming to dark you can cover it lightly with foil.
  12. Let cool 10-15 minutes, then remove from pans and let cool on baking racks.

You can also add ½ cup of yellow raisins to this recipe.

  • 2 cups flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • ½ teaspoon cloves
  • 1 stick butter
  • 1½ cups sugar
  • 2 cups chopped mangoes
  • ½ cup salad oil
  • 3 eggs, beaten
  • 1 teaspoon vanilla
  • 1 cup macadamia nuts, chopped
  • ½ cup grated coconut
  1. Sift the following: flour, baking powder, salt, cinnamon, nutmeg, allspice and
  2. Next, cream butter and sugar.
  3. Then add dry ingredients to butter and sugar mixture.
  4. Mix together mangoes, oil, eggs, vanilla, nuts and coconut.
  5. Then add to mixture.
  6. Pour batter into two 9x5x3 loaf pans. Let rise for 30 minutes.
  7. Bake at 450 degrees for 45 minutes or until done.
