Triple Delight Mango Bars

How about a triple delight mango bar layered with cream cheese and whipped cream, a mango lemon jello layer, on a shortbread macadamia nut crust. Not too sweet, just right. Enjoy!

Mango Bars

  • Crust Ingredients:
  • 1 cup butter
  • ½ cup brown sugar
  • 2 cups flour
  • 1 cup macadamia nuts, coarsely chopped
  • Cream Cheese Layer:
  • 1 box lemon jello, 3 oz.
  • 1 cup boiling water
  • 1 block cream cheese, 8 oz.
  • ⅔ cup sugar
  • 1 cup heavy cream, whipped
  • Mango Gelatin Layer:
  • 2 boxes lemon jello, (3 oz. size) or (6 oz. total)
  • 2 cups boiling water
  • 3 cups mangoes, diced
  1. Crust Instructions:
  2. Preheat oven to 375 degrees.
  3. Cream butter and brown sugar. Stir in flour and nuts.
  4. Press into a 9x13 baking pan (spray bottom with cooking spray if pan isn't non-stick).
  5. Bake for 15-20 minutes, until golden brown.
  6. Cool, then chill for 15 minutes.
  7. Cream Cheese Layer:
  8. Dissolve lemon jello (3 oz. box) in boiling water. Cool.
  9. Beat cream cheese and sugar; add whipped cream.
  10. Gently fold cream cheese mixture into cooled lemon jello.
  11. Pour onto chilled crust. Refrigerate for about an hour or until firm.
  12. Mango Gelatin Layer:
  13. Dissolve lemon jello (2-3 oz. boxes) in 2 cups of boiling water. Cool.
  14. Arrange mangoes on firm cream cheese layer.
  15. Gently pour the cooled jello over mangoes.
  16. Refrigerate until set.
