Lilikoi or Guava Lemon Bars
Cuisine: Hawaiian Local Style
  • ½ cup powdered sugar
  • 1½ cups flour
  • ¾ cup butter (unsalted) or 1 stick room temperature
  • 2 cups white sugar
  • ½ cup lemon juice (fresh)
  • ½ cup lilikoi juice
  • 1 lemon (zested)
  • 6 eggs plus 1 egg yolk
  • Pinch of salt
  1. Crust:
  2. Preheat oven to 350 degrees and butter a 9x13 pan.
  3. Whisk together ½ cup of powdered sugar and 1 ½ cups of flour.
  4. Next, add butter and gently mix until ingredients form dough like consistency.
  5. Place onto 9x13 buttered pan and press to cover bottom about ¼ inch up on the
  6. Bake at 350 degrees for 25 to 30 minutes or until golden brown.
  7. Filling:
  8. Whisk together the remaining flour and white sugar.
  9. Add the juice of the lemon and lilikoi along with the zest of lemon to mixture until
  10. Use another bowl to whisk eggs, egg yolk and salt.
  11. Then combine both and stir.
  12. Next, pour filling onto crust.
  13. Bake at 275 degrees for 30-40 minutes.
  14. Let cool before slicing.
  15. Dust with more powdered sugar and enjoy!
You can substitute fresh lilikoi with a concentrate and you can also use guava.
Reduce sugar in filling to only ⅔ cup.
