Japanese Pickled Cucumbers

  • 4 cucumbers
  • ⅛ cup salt
  • ½ cup soy sauce
  • ¼ cup vinegar
  • ½ cup sugar
  • ½ teaspoon sliced ginger
  • 1 clove garlic, chopped
  • ½ teaspoon chili pepper powder
  1. Slice cucumbers into ¼-inch pieces and add salt. Let sit for 1 hour. Place in dish cloth and squeeze out excess liquid.
  2. Place cucumbers in a jar or container. Mix remaining ingredients than add to cucumbers; refrigerate.
