Japanese Pickled Cucumbers

- 4 cucumbers
- ⅛ cup salt
- ½ cup soy sauce
- ¼ cup vinegar
- ½ cup sugar
- ½ teaspoon sliced ginger
- 1 clove garlic, chopped
- ½ teaspoon chili pepper powder
- Slice cucumbers into ¼-inch pieces and add salt. Let sit for 1 hour. Place in dish cloth and squeeze out excess liquid.
- Place cucumbers in a jar or container. Mix remaining ingredients than add to cucumbers; refrigerate.
