  • 5 pounds pork loin roast
  • 2 teaspoons ginger, minced
  • ¼ cup orange juice
  • ½ cup apricot jam
  1. Place meat fat side up in a roasting pan. Bake at 325 degrees until meat thermometer reaches 150 degrees, roughly about 11/2 to 2 hours.
  2. Combine jam, juice and ginger and brush onto meat. Continue cooking until for about 15 minutes.
