Coconut Corned Beef and Cabbage

Ingredients
  • 1 2½ to 3 pounds corned beef brisket
  • 1 can coconut milk
  • 1 small head cabbage, cut into chunks
  • 4 to 5 red potatoes, cut into chunks
  • 1 small onion
Instructions
  1. Turn slow cooker on high
  2. Place brisket in bottom of slow cooker. You can also cut up into chunks. Add enough water to cover brisket about three quarters and pour coconut milk over.
  3. Layer cabbage and then potatoes. Do not mix together.
  4. Cover and cook about 5 hours. Add onions during the last 15 minutes.
  5. When brisket is soft, remove vegetables with a slotted spoon and place on platter. Remove brisket and slice or cube.
Notes
You can place in bowl and add broth or serve without. It has a mild sweet flavor with the brine. Delicious.
