Lilikoi Chiffon Pie

Chiffon Pie “Lilikoi” Recipe
Cuisine: Hawaiian Local Style

Ingredients
  • 4 eggs, separated
  • ½ teaspoon salt
  • 1 cup sugar
  • ½ cup lilikoi (passion) concentrated juice
  • 1 teaspoon lemon zest
  • 1 envelope gelatin
  • ¼ cup cold water
  • 1 9-inch baked pastry shell
  • Whipped cream or cool whip
Instructions
  1. Beat egg yolks until thick.
  2. Blend in salt, ½ cup sugar, and juice concentrate.
  3. Cook over low heat until thickened, stirring constantly.
  4. Soften gelatin in water; stir into hot mixture until gelatin is dissolved.
  5. Chill until slightly thickened.
  6. Beat egg whites until soft peaks form.
  7. Gradually add remaining sugar and beat until stiff peaks form.
  8. Fold egg whites into gelatin mixture.
  9. Pour into pie shell and chill until firm.
  10. Cover with whipped cream.

Ingredients
  • 1 envelope gelatin
  • ¼ cup cold water
  • 4 eggs, separated
  • ½ cup sugar
  • 1 cup guava pulp
  • 2 tablespoons lemon juice
  • ½ cup sugar
  • Whipped cream
  • 1 9-inch baked pie shell
Instructions
  1. Dissolve gelatin in ¼ cup cold water in double boiler.
  2. Add beaten egg yolks and ½ cup sugar into gelatin mixture and cook until thickened, about 3-7 minutes.
  3. Remove from heat and add guava pulp and lemon juice.
  4. Cool until jelly consistency.
  5. Beat egg whites and ½ cup sugar and fold into gelatin.
  6. Pour into baked pie shell.
  7. Top with whipped cream.
