Slow Cooker Chicken Luau Stew
Cuisine: Hawaiian
  • 1 can coconut milk
  • 1 package luau leaves, peel and chop up the (Ha) stems
  • 1 Maui onion, chopped
  • 2 pounds of boneless chicken thighs, chopped and salted
  • Hawaiian salt
  1. Add enough coconut milk to cover bottom of crock pot.
  2. Line about ½ of luau leaves over coconut milk
  3. Add a little more coconut milk over leaves
  4. Add half of the onions and stems and add more coconut milk, then add the
    remaining onions, stems, chicken and coconut milk.
  5. Cover mixture with the other ½ of luau leaves.
  6. Cook and set on high for 6 hours. After 4 hours into cooking, press luau leaves into liquid.

You'll find luau leaves in most local supermarkets. Unfortunately it doesn't taste the same if you substitute spinach or some other green leaf. Luau leaves has it's own distinct flavor.
