Local Style Beef Stew
Cuisine: Hawaiian & Local Style
  • Stew meat ingredients:
  • 2 tablespoons, vegetable oil
  • 2 pounds stew meat
  • Roux ingredients:
  • 1 medium onion, chopped
  • 2 tablespoons tomato paste
  • 3 tablespoons, flour
  • 1 bay leaf
  • Vegetables & tomato ingredients:
  • 3 medium carrots, peeled and chopped
  • 2 medium potatoes, peeled and chopped
  • 4 stalks celery, chopped
  • 1 can (15 oz.) tomato sauce
  • 1 can (15 oz.) diced tomatoes
  1. Stew meat instructions: Preheat large pot and add oil to lightly coat the bottom. Sear stew meat in single layers to caramelize meat. Remove meat and set aside.
  2. Roux instructions: Add onions to same pot using any oil left. Cook until translucent and caramelized. Next, add tomato paste to onions and cook for a few minutes. Add 3 tablespoons of flour to make a roux. This will help thicken stew and give it body.
  3. Now add browned stew meat to mixture and season with salt and pepper, and then add in bay leaf. Next, add enough water to cover meat and bring to a boil. Cover and simmer for 2 hours or until meat is fork tender.
  4. Adding vegetables & tomatoes: Add carrots, potatoes, celery, tomato sauce and diced tomatoes. Simmer for approximately 15 minutes or until vegetables are cooked.
