Banana Cream Pie Deluxe

  • Crust:
  • 1 cup flour
  • ¼ cup brown sugar
  • ½ cup macadamia nuts, chopped
  • 1 stick butter, sliced
  • Fruit layer:
  • 3 to 4 bananas, sliced lengthwise
  • Cream cheese layer:
  • 1 package 8-ounce cream cheese, softened
  • 1 cup powdered sugar
  • 1 container 8-ounce cool whip, thawed
  • Banana pudding layer:
  • 2 boxes 3.4 ounce instant banana cream pudding
  • 3 cups milk
  • Topping:
  • 1 container 8-ounce cool whip, thawed
  1. Crust: Preheat oven 350 degrees. Spray bottom only of 13 x 9-inch baking pan. Mix together flour, brown sugar and nuts. Add butter and mix until dough is flaky and you can make into a loose dough ball. Don't overwork flour. Press dough onto bottom of greased baking dish. Bake for 10-12 minutes, or until lightly browned. Let cool and refrigerate. Be sure crust is cooled before adding bananas.
  2. Fruit: Cut bananas lengthwise. You can cut it in thirds or in half and layer bananas on cooled crust.
  3. Cream cheese layer: Cream together cream cheese and powdered sugar, be sure to smooth all lumps. You can also use hand mixer until creamy. Next, fold in cool whip. Then spread over bananas.
  4. Banana pudding layer: Mix together instant pudding with only 3 cups of milk. Stir until smooth and creamy. Smooth over cream cheese layer.
  5. Cover and refrigerate 2 to 3 hours.
  6. Spread whole container of cool whip over pudding layer. Keep chilled until ready to serve.
You can also use chocolate pudding instead of banana.
To keep bananas from turning brown, be sure crust is completely cooled, or you can dip them in a little lemon juice. It doesn't leave any lemon taste. Enjoy!
