Two Delicious Adobo Recipes

Try pork or chicken adobo recipe, which is enjoyed by many throughout Hawaii, especially over a bed of  hot rice, delicious!

Pork Adobo
Cuisine: Filipino Local Style
  • 2 pounds pork butt, belly or shoulder, cut into 1 ½ inch pieces
  • 1 cup soy sauce
  • 2 tablespoons garlic, minced
  • 1 cup water
  • 1 tablespoon peppercorns
  • 5 bay leaves
  • ¼ cup white distilled vinegar, add more as desired
  • Salt to taste
  1. Marinade the following ingredients for about 1 hour: pork belly, soy sauce and minced or crushed garlic.
  2. In a heated pot, add marinated ingredients and cook for a few minutes.
  3. Next, add 1 cup water, pepper corns and bay leaves and bring to a boil. Turn heat to low and simmer for about 1 hour.
  4. Then add in vinegar and simmer for another 15 minutes.
  5. Salt to taste


Pork and Chicken Adobo


Chicken Adobo Recipe

  • 1½ pounds chicken thighs or breast, skin on, bone-in
  • ½ cup vinegar
  • ¼ cup water
  • ¼ cup soy sauce
  • 3 cloves garlic, minced
  • ½ teaspoon peppercorns
  • 1 bay leaf
  1. Cut chicken into 1 to 2 inch pieces and place in pot with a little oil. Add the rest of the ingredients to chicken and mix. Cover and let marinade in refrigerator for 2 to 3 hours.
  2. On medium high heat, bring chicken to a boil and simmer for 30 minutes.
  3. Uncover and simmer an additional 15 more minutes or until the liquid evaporates.
